Diet Apple Pie Recipe

2 cans Apple Pie Filling
2 teaspoons Sugar Substitute
1 tablespoon cinnamon
1/2 tablespoon nutmeg
1 tablespoon Butter Or Margarine
2 tablespoons flour
1 cup Crushed Pineapple In Juice -- Undrained
1 Pie Crust -- Top And Bottom

In large bowl combine apple slices and all ingredients except butter. Mix together. Pour into unbaked bottom crust. Dot with butter. Top with vented or lattice crust. Bake 425 degrees F for 15 minutes. Reduce heat to 350 degrees F and continue baking 25 to 35 minutes or until crust is golden brown. This recipe for Apple Pie serves/makes 8




Diet Chef Paul`s French Silk Pie Recipe

20 Low fat chocolate sandwich cookies
1/3 cup low cholesterol egg substitute
Cooking spray
3 (1.5 ounce) Chocolate Bars
12 ounces reduced fat cream cheese
2 tablespoons diet instant vanilla pudding mix
1/2 cup brown sugar
1 cup fat free whipped topping

For the crust, crush the cookies in a food processor until fine. Add 1/3 cup egg substitute. Form into dough. Spray a 9 - inch pie plate with cooking spray. Spread the cookie mixture around the bottom of the pie plate. The mixture will be sticky. It may be helpful to use a piece of wax paper or a plastic bag to help spread. Bake in a 350 degrees oven for 15 minutes. Cool. Melt the chocolate bars either in a microwave or over the stove. Combine with all other ingredients except the whipped topping. Mix on low speed until ingredients are incorporated. Whip on high speed for four minutes. Pour mixture over cooled pie shell. Allow pie to set in the refrigerator for at least 4 hours. Spread with whipped topping and serve.

Classic French Silk Pie has about 55 grams of fat per serving. This recipe has about 10 grams. This recipe for Chef Paul`s French Silk Pie serves/makes 8





Diet Cherry Pie Recipe

1 (9") unbaked pie shell
2 Egg yolks
2 cups Unsweetened cherries
1/4 cup Evaporated milk
1/4 cup Soft margarine
1 tablespoon Flour
2 Egg whites
1/2 teaspoon Vanilla extract
1/2 cup Sugar replacement
2 teaspoons granulated sugar replacement

Drain cherries; pout into unbaked pie shell. Cream margarine, flour, and sugar replacement. Add egg yolks and beat until smooth. Add evaporated milk and vanilla extract. Pour over cherries. Bake at 450F for 10 minutes. Reduce heat. Bake at 350F for 30 minutes. Whip egg whites until soft peaks form. Add granulated sugar replacement; whip until thick and stiff. Top pie filling with meringue, carefully sealing edges. Bake at 350F for 12-15 minutes, or until delicately brown. This recipe for Cherry Pie serves/makes 8


Diet Lemonade Pie Recipe

1 small can lemonade concentrate
1 can low/no fat sweetened condensed milk
1 (8 oz.) Fat Free Cool Whip
1 graham cracker crust

Mix all ingredients together and color with a few drops of red food coloring. Pour into crust and let set in the refrigerator for two hours before eating. This recipe for Lemonade Pie serves/makes 6



Diet Low-Fat Coconut Cream Pie Recipe

1 large package instant coconut cream pudding mix
2 3/4 cups skim milk
1 (9") reduced fat graham cracker pie crust

In medium bowl, combine pudding mix and milk; mix until smooth. Pour into pie crust. Chill for 1 hour.

Diet Sky High Chocolate Pie Recipe


***Filling:***
2 cups fat-free milk, divided
2/3 cup sugar
1/3 cup unsweetened cocoa
3 tablespoons cornstarch
1/8 teaspoon salt
1 large egg
2 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
1 (6-ounce) reduced-fat graham cracker crust
***Meringue:***
1 cup sugar
1/2 cup water
8 large egg whites
1 teaspoon cream of tartar

To prepare filling, combine 1/2 cup milk, 2/3 cup sugar, and next 4 ingredients (2/3 cup sugar through egg) in a large bowl, stirring with a whisk. Heat 1-1/2 cups milk in a heavy saucepan over medium-high heat to 180 degrees or until tiny bubbles form around edge (do not boil). Remove from heat. Gradually add hot milk to sugar mixture; stir constantly with a whisk. Return milk mixture to pan. Add chopped chocolate; cook over medium heat until thick and bubbly (about 5 minutes); stir constantly. Reduce heat to low; cook 2 minutes, stirring constantly. Remove from heat; stir in vanilla. Pour into crust; cover surface of filling with plastic wrap. Chill 3 hours or until cold. Preheat oven to 350 degrees. To prepare meringue, combine 1 cup sugar and water in a saucepan; bring to a boil. Cook, without stirring, until candy thermometer registers 240 degrees. Beat egg whites and cream of tartar at high speed of a mixer until foamy. Pour hot sugar syrup in a thin stream over egg white mixture; beat at high speed until stiff peaks form. Remove wrap from filling. Spread meringue evenly over filling; seal to edge of crust. Bake at 350 degrees for 15 minutes or until lightly browned; cool on a wire rack. Chill until set.

Diet Sugar Free Strawberry Pie Recipe

1 box sugar-free strawberry jell-o
1 quart strawberries, sliced
1 box sugar-free vanilla pudding
1 baked pie shell
2 cups water
fat-free whipped topping

Mix jell-o and pudding with water. Cook over medium heat till thick. Remove from heat and cool. Mix with berries and pur into pie shell. Chill till firm. Served with whipped topping.

Diet Lowfat Frozen Mango Cream Pie Recipe

3 large mangos, peeled and coarsely chopped
3/4 cup sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/2 cup sugar, divided
1/4 cup fresh lime juice
1 container (8 oz size) 50% less-fat cream cheese
1 container (8 oz size) fat-free whipped topping (Cool Whip, etc.)
***Light Graham Cracker Crust***
1 1/4 cup low fat graham cracker crumbs
OR
10 whole crackers, crushed
2 tablespoons sugar
3 tablespoons butter or other light butter or margarine, melted
***Fresh Mango Lime Compote***
1 large mango peeled and thinly sliced
2 tablespoons sugar
2 tablespoons fresh lime juice
1 tablespoon orange liquor - optional

To Prepare Crust: Preheat oven to 375º F. Combine crumbs, sugar and melted margarine in the bottom of 9 to 10-inch spring-form pan. Pat crust evenly over bottom of pan. Bake crust for 8 minutes, remove from oven and set aside to cool before filling. Prepare crust according to recipe below and cool to room temperature.

In a blender or food processor, puree mango with 1/2 cup sugar; 1/4 cup lime juice and orange liquor until smooth. Place cream cheese and 3/4 cup sugar in large bowl and beat with a mixer at medium speed until smooth. With mixer on low speed pour mango puree into cream cheese mixture and beat together until well combined. Using a spatula or wooden spoon fold whipped topping gently into mango/cheese mixture until well blended. Pour mixture into prepared pan smoothing out top, cover with foil or plastic wrap and freeze until firm at least 4 hours or overnight. To prepare Compote gently toss fresh mango slices with sugar, lime juice and liquor, cover and refrigerate until needed.

To serve: slip wet knife around edge of spring-form pan to release sides of pie and remove ring from pan. Place bottom of pan on serving plate and top pie decoratively with Fresh Mango Compote or slice pie into 12 pieces and top each slice with 1-tablespoon Mango Compote. Per serving: approximately 250 calories; 4.4 grams total fat; 2.4 grams saturated fat; 11 milligrams cholesterol; 49 grams carbohydrate; 0.4 gram dietary fiber; 2.7 grams protein; 203 milligrams sodium.
