Diet Chicken Meatloaf Recipes 1 medium onion, chopped 1 celery rib, chopped 3 cloves garlic, minced 1-1/4 cups canned chicken and rice soup 1/2 cup fresh breadcrumbs 1/4 cup grated Parmesan cheese 1-1/2 lbs. ground chicken Preheat oven to 350°F. Combine first 6 ingredients in a medium bowl. Add ground chicken and salt and pepper to taste and mix well. Transfer to an 8x4 inch loaf pan.
