Diet Lighter Classic Cheesecake Recipe

nonstick cooking spray
1 1/4 cup graham-cracker crumbs
3/4 cup granulated sugar -- divided
1/4 cup prepared prune butter
16 ounces fatfree cream cheese -- softened
1 lemon, grated peel of
1 tablespoon lemon juice
2 teaspoons vanilla extract -- divided
3 eggs
1 cup fat-free sour cream

Generously coat an 8 1/2- or 9-inch springform pan with cooking spray. In medium bowl, combine crumbs and 3 tablespoons sugar. Cut in prune butter with pastry blender until mixture resembles coarse crumbs. Press evenly onto bottom and about 1 1/4 inches up side of pan; set aside. Preheat oven to 375° F. In large mixer bowl, beat cream cheese, 1/2 cup sugar, lemon peel, lemon juice and 1 teaspoon vanilla at medium speed about 2 minutes, until smooth. Add eggs, one at a time, beating well after each addition. Pour into prepared crust. Bake in center of oven about 50 minutes, until just set .Meanwhile, in small bowl, combine sour cream with the remaining 1 tablespoon sugar and 1 teaspoon vanilla. Spread over top of hot cake and bake 10 minutes more. Cool completely on wire rack. Cover and refrigerate until chilled, at least 2 hours. Cut into wedges. Serve with berries or seasonal fresh fruit slices.

Diet Low Fat Berry Cheesecake Recipe

3 packages (8 oz. size) fat free cream cheese, softened
3/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon vanilla
3 eggs
1/4 cup crushed low fat honey graham crackers
1/2 cup sliced strawberries
1/2 cup blueberries
1/2 cup raspberries
2 tablespoons strawberry jelly, melted

Beat cream cheese, sugar, lemon juice, lemon peel and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Spray 9-inch pie plate with no stick cooking spray; sprinkle bottom with crumbs. Pour cream cheese mixture into prepared pie plate. Bake at 300F for 45 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with fruit; drizzle with jelly.

Diet Almost Fat-Free Cheesecake Recipe

***CRUST:***
1/2 cup graham cracker crumbs
***TOPPING:***
16 ounces fat free sour cream
3 tablespoons sugar
1 teaspoon vanilla
***FILLING:***
3 pkgs. (8 oz. ea) fat free cream cheese -- room temperature
1 cup sugar
1 teaspoon vanilla
6 egg white

0 degrees. Lightly spray a 9 inch spring form pan with cooking spray and sprinkle graham cracker crumbs evenly over bottom. In a large bowl beat together the cream cheese, sugar and vanilla, with an electric mixer on low speed, until blended. Pour filling into prepared pan and bake for 45 minutes, or until center puffs and is almost set. Remove from oven. In a medium mixing bowl combine sour cream, sugar and vanilla and mix thoroughly. Spread mixture over cheesecake and return to oven for 5 minutes or until topping sets. Chill before serving.
