Diet Beef Casserole Supreme Recipe 1 pound (93% lean) ground beef 1 clove garlic, minced 1/2 pound fresh mushrooms, sliced 1/2 teaspoon pepper 1 can low-fat cream celery soup 1/2 cup uncooked Minute Rice 1 tablespoon dried minced onion 1 teaspoon oregano 1 teaspoon salt 1 (10 oz) package each broccoli and spinach 1 cup fat-free sour cream 4 ozs. non-fat mozzarella cheese, thin sliced or grated Cook and drain broccoli and spinach. In large skillet, brown beef; drain. Add onion, garlic, oregano, salt, pepper, and mushroom. Cook 3 minutes, stirring often. Stir in vegetables, soup, sour cream, and rice. Spoon into casserole dish. This recipe for Beef Casserole Supreme serves/makes 6 Chicken Diet Casserole 1 c. uncooked long grain rice Place chicken in large pan. Pour rice over the chicken. Then pour soup over chicken and rice and dot with butter. (Make sure all the rice is covered with the soup.) Cover COVERED for 1 hour at 350 degrees. Diet Chicken Casserole 1 c. orange juice Combine juices and sweetener; add seasonings. Cook over low heat 5 minutes, stirring constantly. Put chicken in casserole; spoon sauce over meat and bake at 350 degrees for approximately 1 hour. Garnish with parsley when ready to serve. Diet Chili Relleno Casserole 4 whole green chiles, canned, split open Place whole green chiles on bottom of a 2-quart casserole dish. Mix meat and taco seasoning. Pour over chiles. Sprinkle on 2 ounces of cheese. Beat egg white until stiff; fold in yolk and flour. Spread over cheese. Bake at 325 degrees for 20 minutes. Boil tomatoes and green chiles and garlic powder. Pour over yolk mixture. Top with remaining 2 ounces of cheese. Bake until cheese melts on top. Diet Meat Casserole 3/4 c. noodles, uncooked Heat oven to 350 degrees. Combine all ingredients. Turn into well greased casserole; bake 2 hours and 15 minutes. Diet Low Calorie Spinach Mushroom Casserole 2 (10 oz.) pkg. frozen chopped spinach thawed and drained Saute mushrooms in diet butter. Mix spinach with onions, salt, garlic powder and liquid from sauteed mushrooms. Spray bottom of square baking dish with vegetable spray. Line bottom of dish with spinach mixture. Layer with 1/2 of cheese. Cover with mushrooms. Cover with rest of cheese. Sprinkle with paprika. Bake in 350 degree oven for 20 minutes. Serve hot. Serves 4 to 6. Diet Fish Florentine Casserole Recipe 4 tsp. dry onion bits or 1/4 c. finely chopped onion, cooked Set spinach mixture aside and rinse 1 pound thawed, frozen fish fillets (raw). 2 tbsp. and 2 tsp. real mayonnaise (not diet, etc.) Prepare 3-4 pounds fresh lemon juice (not bottled) and set aside. In a large glass casserole dish with lid, spray nonstick Pam to keep food from sticking. Turn oven to 400 degrees (preheat). Lay 1/2 of thawed fish fillets in bottom of greased glass casserole. Spoon spinach mixture on top of the spinach-mushroom mixture. Top with mayonnaise-mustard mixture. Sprinkle fresh lemon juice atop the mayonnaise mixture. Take care: DO NOT SPRINKLE LEMON ON SPINACH MIX. Cover with lid and place in preheated oven. Cook in 400 degree oven for 20-25 minutes or until fish flakes easily Diet Spanish Rice Casserole Recipe 1 1/2 lbs. ground beef Brown beef and drain fat. Season with salt and pepper if desired. While beef is cooking, mix remaining ingredients, except water and cheese in large (2 quart) casserole. Add beef and sufficient water to moisten. Sprinkle with cheese and bread crumbs. Bake at 400 degrees for about 20 minutes.
